every few weeks tom and i hunker down in the kitchen for a day and cook a bunch of big batches of food to freeze and put away for future weeknight dinners when we don’t feel like cooking. this is a great way to still eat healthy-ish, home-cooked meals with little effort after a long day. it’s usually stuff like enchilada filling, soups, cassoulet and veggie burgers.
this weekend, in addition to the usual dishes, tom went crazy with the baking! i woke up sunday morning to an odd thumping sound coming from the kitchen aid mixer. it was dough. dough for:
bagels!
i have to say, they were pretty close to awesome. and being a girl from jersey, i have pretty high bagel standards. a few changes and he might have himself a recipe to compete with the real thing!
they were finished a bit too late for breakfast, so tom indulged in a lunch classic: cheese and lettuce on an onion bagel.
fortified by his mid-day meal, he decided to push on to the next challenge. sub rolls for our planned evening dinner of veggie “cheese steaks”. they went from this:

i worked on the sweet side of baking, attempting an oreo type snack:
which, by the way, was a miserable failure. totally inedible. but i did get a few good ideas for making a successful fake oreo in the future, so stay tuned.
and i tried my hand at making my own granola:
this, on the other hand, was a huge success. it is no secret that breakfast is my favorite meal and i am so excited about the flavor possibilities making my own granola will provide me! i am a big fan of breakfast variety.
